Pastaio Via Corto is a fresh pasta shop located in downtown Gloucester, Massachusetts, off of Main Street. Different types of fresh pasta are made daily featuring local organic and sustainable ingredients. 

The flour we use is the most important element of Pastaio and base of the entire concept of the shop. The organic whole wheat flour is sourced from Alprilla Farm in Essex, Massachusetts where it is grown by farmers Noah and Sophie. The organic durum-semolina wheat and other flours are sourced from the province of Quebec by La Milanaise. The eggs for the fresh pasta come from Chicken Little Farm in Ipswich, Massachusetts, where Cole has been raising free-range chickens since he was a kid.  Vegetables and herbs are grown by Caitlin from Plough in the Star Farm in Ipswich.

Pastaio Via Corto also sells house made pasta sauce, olive oils, vinegars, cheeses and other ingredients to make the perfect pasta dinner.
